[VIDEO] Chicken and tarragon “hotpot”

Another very cold day and another lovely winter dish. Archie was in a gorgeous and non-destructive mood in the kitchen – although perhaps disappointed at the relative lack of havoc  he could wreak when making a casserole. After all, this didn’t involve any cake mix, nor did it involve pressing any buttons on food mixers!

We let Archie eat from casseroles like this virtually from the day we started weaning him. The chicken in this “throw–in-the-pan” type stew comes out perfectly soft and tender, there are loads of vegetables and cooking the potatoes on top like this, in true hotpot style, leaves them deliciously full of flavour. It really is an ideal meal for all the family, with the added bonus that it is very easy to prepare and there is always some left over to freeze for eat later in the week.

Chicken and tarragon hotpot

Preparation time 15 minutes, cooking time 2 hours
This served three of us with plenty left over for a few lunches

4 chicken drumsticks and 4 chicken thighs
Chop up the following:
1 onion
2 garlic cloves
1 courgette
2 medium carrots
3 celery sticks
1 25g bunch of fresh taragon
You will also need:
A good handful of dried barley
4 medium potatoes, sliced into 2mm thick slices
700ml of good quality chicken stock
A tsp of plain flour

Preheat the oven to around 180°C/350°F

  1. In an oven-proof casserole dish (with a lid), fry the onion and garlic in some olive oil.
  2. When they are nicely soft, add in the other vegetables and cook them for a few minutes while they soften a little.
  3. Add the barley, tarragon and flour and mix well together.
  4. Add the chicken and mix again.
  5. Layer the potatoes over the chicken, overlapping the slices and covering the chicken fully.
  6. Put the lid on and cook in the oven for approximately 90 minutes (you can relax about timings!).
  7. Remove the lid for the last 30 minutes to brown the potatoes a little.  When you take the lid off, if you press down gently on the potatoes and see no liquid at all, feel free to add a little water.
  8. Serve immediately when the potatoes have browned up nicely.

    I think this is my favourite ever. Clever Archie for thinking that cows like barley, I'm sure they do! And I love love love the "your spoon, my spoon" shenanigans, we have exactly the same go on here. And Tim was watching over my shoulder almost drooling at the sight of the hot pot – guess what I will be cooking this weekend?!

    Hi Nick… this is a completely brilliant idea for a blog. It seems like one of those things that will sound simple but be really difficult to do well in practice, but you do it like it's easy!! Well done, really and honestly. I saw it on BBC London news and have now bookmarked it.
    I was thinking though, once you get more recipes building up and up, you should have a vegetarian category? I'm not vege myself but I've made a resolution to try and eat as much vege as I do of meat, which means cutting down on meat. Always looking for new ideas! Meantime I'll keep an eye out for more of your soups etc. Hotpot looks brilliant too.

      Hi Christy, thanks so much for your kind comments. I guess the idea is a simple one, mainly because the blog really does just document what we do in our house. There is no smoke and mirrors… You are absolutely right about vegetarian dishes and I agree, I need to have more… I will rectify that over the coming weeks… And don't worry, if the weather continues to be so cold, there will be plenty more soups!     Thanks for this Nick, I made this for my family this afternoon. My little man is only 8 months so helped by playing with wooden spoons and ladles whilst I got on with it. He didn't leave a scrap of it in the bowl, so huge thumbs up. The 14 and 5 year old polished it off too, so a real winner! Do you do requests? Have you a tried and tested recipe for beef goulash?

    Delicious, the chicken was really tender. I felt very daring to cook with tarragon (which I had never encountered before) and celery (which I have always avoided because it is so horrible raw) but I'm glad I braved it.

    By the way, in the ingredients list you say 'tsp' of flour but in the video you say 'tablespoon' (and it looked like more than that). I used a teaspoon of flour and the sauce was a bit thin. I will use more next time.

We've been doing blw since he was 6 months and he enjoys most things but this definitley looked a favourite. love the video as well, I'd be more than happy if Freddie was that keen on cooking in a year or so!

      Since we had Archie, there is no doubt that we use less salt than before. We used little or no salt in the early days with him and I guess this has just carried on as he has gotten older. In this recipe, if you are using a really good quality chicken stock, the dish is likely to be salty enough – and then you can add pepper if you wish at the table. That said, all these recipes can be seasoned as per your own tastes…

    It’s elementary really, i’m just usually in such a rush to get on with my jobs (cooking included) that i usher my little one (just about to turn 2 out of the kitchen) In my drive for household efficiency i’ve quite missed the point. Get her involved, i’m a very confident and enthusiastic cook myself so why shouldn’t she get involved. I will order a funpod and we will get cooking as soon as possible (mess can be cleared up after all, can’t it!). One question, how to stop them randomly touching the hot pans? Or is it let them do it once and they’ll never do it again??

    Saw this on a telly program, came to have a look and have instantly bookmarked it and will be trying this recipe out as soon as I can – I've been getting back into cooking after a mixture of laziness, no money and old issues around not eating properly meant I just never cooked – I now have several recipes I can do well and am always on the look for others as my enjoyment of cooking increases and I think this site is going to help me with that – I also want to try the cheese and veggie muffins!!
    I might not have a little boy to make happy with my cooking, but I have my big boy of a husband who will be very happy (and hopefully not throwing a tantrum in the kitchen when he helps me!!)
    Lastly – as someone who's wanting to start a family in the next couple of years, I'm finding your videos and how your little boy has taken to food inspiring after my childhood issues around it.

    have now made this and , if I say it myself, it was a great success. Wasn't sure about using the tarragon as I'm not usually v keen, but it gave a lovely subtle flavour, not like aniseed balls as I had expected. The only thing missing was Archie – love this blog
