[VIDEO] Mini Easter Simnel Cakes

***These cakes are so good that I will give a way 6 of them, made by me and Archie, to someone picked at random on Monday who has left a comment at the foot of this page! (I am already giving away 2 x 6 on my Twitter page too!) ***
One of the loveliest things about doing this blog is the new friends it has brought me into contact with – and two of them have a big hand in this video. Firstly I have got to know Abi at The Cake Nest (www.thecakenest.co.uk). She makes truly lovely cakes and it was during a chat with her this week that the idea came up to do Simnel cake on the blog. This recipe is her version of this classic cake. I can confirm it is absolutely delicious – and making muffin sized cakes makes them even more moreish than “big” version. The other “star” of this video is Hayley Jones, a herbalist from Hythe. She made Archie a monkey, complete with a “My Daddy Cooks” apron. Archie is so in love with him that he refuses to cook without him now!
Mini Easter Simnel Cakes
Makes 10-12 large muffins
Preheat oven to gas 4 (180C/350F)
100g Butter
100g Caster Sugar
2 Eggs
150g Plain Flour
1/2 tsp Cinnamon
1/2 tsp grated Nutmeg
250g Chopped Dried Mixed Fruit
Finely grated zest of half a lemon
100g marzipan rolled into large pea sized balls
- In a food mixer or a bowl, cream together the butter, sugar and lemon zest until it is light and fluffy.
- Add in the two eggs.
- Mix in the flour and spices (I did 2 and 3 the “wrong” way round in the video!).
- Add the fruit.
- Grease your muffin tin and spoon the mixture in.
- Sink a marzipan ball into each cake, making sure it is covered in mixture.
- Bake for 25-30 minutes (keep an eye that the cakes do not overcook on top). Take the muffins out of the tin as soon as they come out of the oven. Leave them to cool and see how long it takes before they all get eaten!

Yum!These look great. We love it when you do cakes! Loved the “WOW!” from Archie when you opened the oven….exactly what my 2 year old says when cakes are around. How do you stop Archie eating all the cake mix? We usually have tantrums at the putting the cake in the tin stage because I wont let Noah eat the mixture! Anyway off to get the ingredients to make these – thanks

I am Italian, I have been living in London for quite a while now, but I have never heard of Simnel Cakes! I will try this recipe this week-end. Archie is so lovely, his “WOW” at the end of the video made me smile

Oh Nick – your Simnel cakes look great and I will certainly be making them for Easter tea-time – but that boy! I was so busy watching him wrinkle his nose and listening to him “Push” the marzipan balls in, even telling us to bake them for 25mins – that I missed much of what you said. But good excuse to watch the vid again.

You’ve just saved me from having to look up a Simnel cake recipe for when the family come to visit on Easter Sunday – mini ones are a much better idea as the kids can go on a hunt for them!

just made these, caught a little bit on the top but no worries, and though I said bye bye marzipan balls and tucked them right in they sort of exploded out into a yellowy streak on top of each bun. Just had to try one – it would have been rude not to – and it was delicious. Now I don’t feel like eating any supper… Thanks Nick and Archie. Artichoke and carrot soup next – hop hop..

i’ve just caught up on the last few videos having been away from the computer for a bit. this one is brilliant. his cry for help with the apron and the “wow” are both very familiar!! i love that they are so easy to please in the kitchen! i’ve been called super mummy in the kitchen a few times now
Absolutely Laura, who needs expensive “wow” toys when just a bit of helping in the kitchen can have double the impact and effect! I have yet to be called super daddy though!!
Just discovered your website after reading an article in Top Sante magazine. Mentioned you in a little article I wrote in our local parish magazine, directing locals to your blog. If all dads were able to get their little ones engaged in cooking at an early age, maybe takeaways would be a thing of the past and we could all look forward to a future of happy healthy kids, becoming healthy adults who can pass on these skills to the next generation. You should tell primary schools about your blog and maybe the children could all cook together and bring home their treats.
