مرتبطة هنا There’s just about enough time left for you to make this wonderful vanilla fudge before Valentine’s Day. Trust me – make these and wrap them up with a little bow and you will be a Valentine’s hero. I made them yesterday on my BBC Radio Show and they were fabulous. I’ll be honest, unusually for this blog, these are very much a grown up recipe to make. The sugar/butter/milk mix gets very hot and I certainly wouldn’t consider letting Archie anywhere near the boiling saucepan. He didn’t care – and was only too happy to eat the finished product! This recipe will give you soft, melting, sweet and crumbly fudge. Perfect for Valentine’s Day – or any other day for that matter – when only a decadent little sweet treat will do. Better still, you can make them from ingredients which you will more than likely have in your fridge and cupboards. Even if you don’t have the condensed milk, I reckon you can substitute it by doubling the milk quantity, especially if you are using full-fat milk. Getting into the Italian spirit, I made one of Archie’s favourite desserts, this easy Panna Cotta. It basically means “cooked cream” in Italian and for a toddler, what is not to like in a big wobbly mass of cream, sugar and vanilla, with some syrupy raspberries spooned over the top? And in spite its exotic sounding name, there are few easier desserts to make than this one. Preparation time 10 minutes, plus 4 hours chilling Cooking time 5 minutes Makes 4 300ml double cream 300ml full-fat milk 4 tbsp caster sugar 1 tsp vanilla extract 2 tsp powdered gelatine 3 tbsp water For the syrup: 150g raspberries 100g caster sugar 50ml water In a bowl, mix the gelatine powder and 3 tbsp water, leave it to stand for 5 minutes. Mix together the cream, milk and sugar in a saucepan and bring to the boil. Simmer very gently for 1 minute, then take it off the heat and leave to cool down for a few minutes. Pour the cream mixture over the gelatine and mix well, so that all the gelatine is dissolved. It goes out every Sunday, between 19.00-21.00 and features everything related to food and drink in Beds/Bucks/Herts and well beyond too. I will be cooking in my kitchen each week for the show and I wanted to start this week with a home cooking classic – roast lunch, with full trimmings. I don’t believe in worrying about cooking times for lamb. I just love to slow roast mine and a few extra minutes in the oven is not going to hurt it at all. As you will see, I just throw my shoulder of lamb in the oven and forget about it for four hours! I always serve my lamb with the full trimmings, including (controversially?) Yorkshire puddings. This post details how to prepare your roast meal so that everything – lamb, potatoes, Yorkshire puddings and vegetables – are all ready at the same time. These deep fried doughnut tubes are a true taste of my childhood. They were the highlight of any holiday to Spain, either served simply with caster sugar for dipping or, a little more indulgently, with thick hot chocolate. They are actually remarkably easy to make – although I didn’t let Archie go anywhere near the deep fryer when I was cooking the batches. It would not be an understatement to say, though, that I have never seen him enjoy a treat quite as much as he enjoyed dipping the churros in the rich, creamy hot chocolate sauce… Preparation time 5 minutes, plus 30 minutes chilling Cooking time 20-25 minutes For the churros: 250g plain flour Small pinch of salt 200ml water 50g unsalted butter 300-400ml vegetable oil for frying 2-3 tbsp caster sugar for dusting For the hot chocolate: 150g chocolate, at least 70% cocoa, grated 300ml double cream A small drop of vanilla extract 1 cinnamon stick To make the churros mix, melt the butter in a pan on a low heat. Add the water and bring it to the boil. Pour the hot liquid into a bowl containing the flour and stir really well using a wooden spoon to make a smooth and rather thick paste. But the point of this video is not to turn out a big yellow splodge which can vaguely pass as an omelette (this is what most of the omelettes on that programme turn into, in the pursuit of speed). What I wanted to show here was that, even with a toddler in the kitchen, you can make a tasty and nutritious lunch in under 5 minutes, from the moment you open the fridge to the moment it is served on a plate. The final time was actually well under 5 minutes as you will see in the video… In fact, cooking this omelette took even less time than putting a piece of toast on – proof that you can cook ultra-quick, tasty and very baby/toddler friendly lunches, even when you have no time at all and barely one egg left in the house! Cheese and tomato omelette Total preparation and cooking time, under 5 minutes.
