VIDEO - Easy chicken and sweetcorn pasta bake
This is such a ridiculously easy recipe video, I am almost embarrassed to call it a recipe. It’s also great for preparing with children as it involves almost exclusively cold preparation (apart from cooking the pasta). I am always looking for ways of using up leftover meat and this bake is an ideal way of doing that.
Creamy Tomato and Chicken Pasta Bake
400g tomato passata or one can chopped tinned tomatoes
125ml double cream
1-2 tsp dried or fresh basil, oregano or parsley
300g pasta cooked according to pack instructions and drained
A couple of big handfuls of leftover chicken (or turkey)
100g tinned or frozen peas
A small tin of sweetcorn
125g Mozzarella cheese
- In a small bowl, mix together the passata or chopped tomatoes, the cream and the dried herbs.
- Put the cooked pasta, chicken, peas and sweetcorn into an ovenproof dish. Pour over the creamy tomato sauce.
- Chop or tear the Mozzarella into small pieces and lay them over the top of the pasta.
- Bake for about 30 minutes at 180ºC/Gas Mark 4 until the top is golden and crispy.
