VIDEO - Easy cheesy quesadillas

quesaNever for a moment think that things like cheese on toast and toasted cheese sandwiches are not regularly seen on my table at home. Quick, tasty and filling food which my kids love. These quesadillas are a lovely take on a traditional cheese toasty, in so far as they use easy-to-find flour tortillas to create the “sandwich”. This is a great way of using up any leftover turkey or chicken you may have. And if you prefer to avoid a meat version, tinned tuna will work just as well here.

Easy cheesy leftovers quesadillas

To make 4 quesadillas Prep time: 5 minutes Cooking time: 15 minutes 8 flour tortillas 3 tbsp mayonnaise 2 large handfuls of leftover chicken or turkey 300g grated cheese (I like to use half cheddar and half mozzarella) 1 large tin of sweetcorn Olive oil Salt and pepper to season

  1. First make your quesadillas. Spread a little mayonnaise on a tortilla then sprinkle over a little of the leftover meat.
  2. Follow that with some sweetcorn and finally some cheese.
  3. Season with salt and pepper if you want to.
  4. Spread a little more mayonnaise on another tortilla and pop that on top of the fillings, mayonnaise side on the inside.
  5. Heat a frying pan on a medium heat and pour in a good glug of olive oil.
  6. Fry each quesadilla for a couple of minutes on each side, until nicely golden and the cheese has melted.
  7. Serve warm, cut into 6 segments.
